Chili Cheese Dip

This festive dip is filled with spicy beef, loads of cheese, tomatoes, and chili peppers, and is incredibly filling, even though it's just an appetizer. It's made with beer, which creates a rich and deep flavor. Serve it on the table with plenty of corn chips. The perfect appetizer for picnics, house parties, or a night watching a sports game.

Ingredients:

  • 220 g of ground beef
  • 1 tbsp. l. olive oil
  • 1 small red onion, finely chopped
  • 2 tsp ground cumin
  • 1.5 tsp chili powder
  • 2 cloves garlic, finely chopped
  • 2 tbsp. flour
  • 0.5 cups light beer
  • 1 can (280 g) of canned tomatoes with chili peppers, drained
  • 3/4 cup milk
  • 110 g (about 1 cup) Monterey Jack cheese, grated
  • 110 g (about 1 cup) whole milk mozzarella, grated
  • Chopped cilantro and tortilla chips, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a dry medium skillet over medium-high heat, cook the ground beef, stirring occasionally, until browned on the bottom, about 5 minutes. Remove with a slotted spoon and drain any excess liquid. Add olive oil to the skillet.
  • Step 2
  • Reduce heat to medium and cook the onion, stirring occasionally, until lightly browned, 5-6 minutes. Add the cumin, chili powder, and garlic and cook, stirring, until fragrant, about 1 minute. Sprinkle with flour and cook, stirring, until the flour is lightly browned, 1 minute.
  • Step 3
  • Pour in the beer and add the canned tomatoes and chili peppers, bring to a boil, and simmer for 2 minutes. Gradually whisk in the milk and simmer until thickened, about 2 minutes.
  • Step 4
  • Add the cheese and reduce the heat to low. Cook, stirring frequently, until the cheese is completely melted, about 3 minutes. Stir in the fried ground meat.
  • Step 5
  • Transfer to a serving platter, sprinkle with cilantro and serve with chips.
