Mexican dish chili con queso (Spanish: chile con queso Queso (or chili con queso, simply queso) is a dip made from a mixture of melted cheeses and hot chili peppers, traditionally served with nachos, tortillas, and in various Mexican dishes such as quesadillas, enchiladas, and tacos. Make a double-chili cheese dip by adding a hot serrano pepper and a slightly milder jalapeño. Because the dip also includes pepper jack cheese and peppers, it's very spicy, perfect for those who love spicy food. You can also adjust the heat by leaving or removing the seeds from the peppers, which will explode like little bombs on your taste buds. Serve chili con queso warm with plenty of tortilla chips.


Ingredients:

  • 1 shallot, finely diced
  • 2 Campari tomatoes or other small tomatoes, diced
  • 1/4 cup coarsely chopped fresh cilantro
  • 1 tbsp (15 g) butter
  • 2 serrano peppers, thinly sliced
  • 1 red jalapeño pepper, thinly sliced
  • 1 tbsp flour
  • 1 cup of milk
  • 1 cup grated pepper jack cheese (about 120 g)
  • 1 cup shredded American cheese (about 120 g)
  • Tortilla chips for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, combine 1 tablespoon diced shallots, tomatoes, and half of the cilantro; set aside.
  • Step 2
  • In a medium saucepan, melt the butter over medium heat. Add the remaining diced shallots, serrano peppers, jalapeño, and 1/2 teaspoon salt and cook, stirring, until the shallots are softened, about 3 minutes.
  • Step 3
  • Place the flour in the saucepan and cook, stirring, until completely absorbed, about 1 minute. Pour in the milk and bring to a boil; cook, stirring occasionally, until slightly thickened, about 4 minutes.
  • Step 4
  • Stir in the pepper jack and American cheese until melted, then remove the pan from the heat and stir in the remaining cilantro. Transfer to a bowl and top with the fried tomatoes and onions. Serve with chips.
