This is a simple base for a great mac and cheese, which can also be served as a dip. The sauce pairs perfectly with crisp vegetables, tortilla chips, and any savory snacks. Make it ahead of time and let it cool slightly to thicken. If the warm cheese sauce separates, stir in a little warm water, and it should reconstitute. And if the sauce is lumpy, just strain it! If the sauce is too thin, you can thicken it with more cheese. And for a unique twist, add some blue cheese and Worcestershire sauce. To reheat the cooled cheese sauce, bring 1/4 cup water to a boil and gently whisk it into the sauce until smooth.
