This dipping sauce is easy to make with beer and grated cheese, and it can be customized with any toppings or additions you like. Try the suggested blend of fresh cilantro, red onion, and pickled jalapeño, or experiment with your other favorite ingredients. This dip is best served in a fondue pot or small slow cooker, so it stays creamy and smooth while you enjoy a beer with friends. For dipping, place tortilla chips or crackers nearby.

Ingredients:

  • 0.5 cups tightly packed fresh cilantro leaves
  • Half a small red onion, coarsely chopped
  • 2 tablespoons chopped pickled jalapeños, optional
  • 2 tablespoons unsalted butter
  • 3 tbsp. flour
  • 1 bottle (0.33 l) of lager, such as Budweiser
  • 1/4 cup whole milk
  • 4 cups grated Monterey Jack cheese
  • A pinch of ground chipotle pepper, optional
  • Tortilla chips, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place cilantro, onion, and pickled jalapeño, if using, on a cutting board and chop.
  • Step 2
  • In a large saucepan over medium heat, melt the butter. Add the flour and stir until coated. Pour in the beer and milk; whisk constantly until the mixture comes to a boil and thickens, coating the back of a spoon, about 5 minutes.
  • Step 3
  • Remove from heat and stir in the Monterey Jack cheese until completely melted and the sauce is smooth.
  • Step 4
  • Transfer the sauce to a warmed serving dish, fondue pot, or small slow cooker over low heat. Sprinkle with the cilantro mixture and a little chipotle powder, if using. Serve the cheese dip with tortilla chips.

    Note

    To make the sauce smooth, use store-bought grated cheese.
