Cheese dip with baked broccoli and cheddar

A rich cheddar cheese sauce mixed with roasted broccoli makes a delicious dip that pairs perfectly with any appetizer. Serve it hot, before the cheese sets, and dip baked potato wedges, crispy toast, chips, or raw vegetables.


Ingredients:

  • 350 g broccoli florets (about 6 cups)
  • 2 tablespoons of vegetable oil
  • 55 g butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, crushed
  • 2 tbsp. flour
  • 2.5 cups of low-fat cream
  • 220 g mild cheddar, grated (about 2.5 cups)
  • 120 g Monterey Jack cheese, grated (about 1.5 cups)
  • 2 teaspoons Dijon mustard
  • Baked potato wedges, crustless toast triangles, assorted raw vegetables, or potato chips for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position the oven rack on the middle shelf and preheat the oven to 230°C.
  • Step 2
  • On a baking sheet, toss the broccoli with vegetable oil, 1/2 teaspoon salt, and a pinch of ground black pepper and spread it out in a single layer. Roast the broccoli in the oven until browned in spots and tender but not mushy, 15-20 minutes. Transfer the broccoli to a cutting board and let it cool. Then chop coarsely.
  • Step 3
  • Meanwhile, melt the butter in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened, 6 to 8 minutes. Add the garlic and cook, stirring, until softened, about 2 minutes. Stir in the flour and cook until the flour is lightly browned and forms a paste, 3 to 5 minutes. Stir in the heavy cream and continue cooking, stirring frequently, until the mixture comes to a simmer and thickens to the consistency of heavy cream, 10 to 15 minutes. Turn off the heat and stir in the Cheddar and Monterey Jack until completely melted. Gently stir in the roasted broccoli and mustard. Season with salt and pepper.

  • Transfer the dip to a serving dish and serve with baked potatoes or other dipping dishes.
