How to Make Broccoli and Cheddar Puff Pastry Ring

This unique appetizer is perfect for friendly house parties. It's made with store-bought puff pastry. Cut it into triangles and arrange them around a ramekin, in which you'll serve the dipping sauce. The dough is then filled with a broccoli-and-cheddar cream cheese filling and sealed on one side. When baked, the puff pastry will rise and stick together at the sides, forming a single, appetizing ring with holes revealing the bright, juicy filling. Serve the ring with ranch dressing in the center. Separate the puff pastry from the ring, dip, and enjoy.


Ingredients:

  • 4 cups finely chopped broccoli florets (about 360 g)
  • 2 tbsp. l. olive oil
  • 1/4 tsp red pepper flakes
  • 1 clove garlic, finely chopped
  • 170 g cream cheese, diced
  • 2 tubes of 220 grams chilled croissant dough
  • 5 slices cheddar, halved (about 140g)
  • Ranch sauce, for filing
  • Special equipment: ramekin with a diameter of 12.5 cm.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 375°F (190°C). In a large skillet, combine broccoli, olive oil, crushed red pepper, garlic, and 2/3 cup water. Cover and bring to a boil. Let the broccoli steam until bright green and crisp-fleshed, about 3 minutes. Remove the lid and continue cooking until all the water has evaporated, 3 to 4 minutes. Stir in 1/2 teaspoon of salt, add a few grinds of black pepper, and transfer to a medium bowl. Cool slightly, about 15 minutes. Stir in the cream cheese.
  • Step 2
  • Spray the back of a baking sheet with cooking spray. Unwrap the croissant dough from both packages and divide it into 16 triangles. Place a 5-inch (12.5 cm) ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin, with the short sides of the dough touching the ramekin and slightly overlapping, and the pointed ends facing outward (it should look like a large sun).
  • Step 3
  • Spread the broccoli mixture on the short sides of the triangles closest to the ramekin. Cover the broccoli with cheese slices and remove the ramekin. Take the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the edge of the dough to secure it (the dough won't completely cover the filling). Repeat with the remaining triangles (you'll have a few gaps where the broccoli mixture will be visible).
  • Step 4
  • Bake until the crust is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Using a spatula, transfer the entire ring from the baking sheet to a serving platter. Serve with ranch dressing for dipping.
