Step 1: Grate the cheese.


Choose up to 3 types of cheese and grate only 2 cups (about 230 g) on ​​a coarse grater.

  • Cheddar (mild, sharp, smoked, or chipotle)
  • Pepper Jack
  • Monterey Jack
  • American
  • Havarti
  • Munster
  • Mozzarella (low moisture)
  • Processed (eg Velveeta; cut into cubes)

Step 2: Prepare the additives.


Select up to 3 products, prepare 1 tbsp in total.

  • Chorizo, cooked and crumbled
  • Bacon, cook and crumble
  • Ground beef or turkey, cooked and crumbled
  • Grilled chicken, skin removed, chopped
  • Shrimp, cook and chop
  • Crab or lobster meat, chopped
  • Onion, chop and fry
  • Mushrooms, chop and fry

  • Frozen popcorn, thawed
  • Poblano peppers, roasted and diced
  • Canned black or pinto beans, drained and rinsed

Step 3: Choose spices.


In a 10-inch cast iron skillet, melt 2 tablespoons butter over medium heat. Add 1 minced garlic clove and 1 finely chopped jalapeño (remove the seeds for a less spicy flavor); cook until softened, about 4 minutes. Add 2 teaspoons of seasoning, using any combination of the following:

  • Ground cumin
  • Chili powder (regular or ancho)
  • Spices for tacos or fajitas
  • Ground coriander
  • Paprika (sweet, hot or smoked)
  • Chopped chipotles in adobo sauce (use 1 tbsp)

Step 4: Make the queso.


Whisk 1.5 cups of the milk and cream mixture (or 1 cup of the milk and cream mixture and 1/2 cup of beer) and 1/2 teaspoon of salt into the pan. Bring to a gentle simmer, then remove from the heat and whisk in 4 ounces of cubed cream cheese until melted. Stir in the grated cheese in a few additions until melted, then add the ingredients from step 2. Return the pan to low heat and stir to heat through.

Step 5: Add toppings.


Sprinkle the finished dip with any of these ingredients:

  • Pickled jalapenos, sliced
