How to Cook - Spiced Nuts: Cooking Options

1. Choose nuts


Measure out 4 cups raw unsalted nuts in any combination; set aside.

  • Macadamia
  • Hazelnut

2. Choose additives


Measure out just 1.5 cups (choose 1-2, or skip this step).

  • Roasted corn snack
  • Potato chips
  • Mini pretzels
  • Oyster crackers
  • Rice or corn cereal in squares

3. Choose seasonings


Prepare your chosen spice mixture in a small bowl; set aside.

Sesame with Asian spices
Combine 1.5 teaspoons salt, 2 tablespoons sesame seeds, 2 teaspoons soy sauce, 1 tablespoon sesame oil, 1.5 teaspoons grated ginger, 1 teaspoon each red pepper flakes and Chinese 5-spice mix.

Paprika with thyme
Mix 1.5 teaspoons salt, 3 tablespoons sugar, 1.5 teaspoons each paprika and chopped thyme, 3/4 teaspoon mustard powder, 1/4 teaspoon each cinnamon and pepper.

Garlic with herbs
Combine 1 teaspoon each salt and granulated garlic, 1 tablespoon each chopped rosemary, sage and thyme, and 1/2 teaspoon pepper.

Chipotle
Combine 1 1/2 teaspoons salt, 1 tablespoon sugar, 2-3 teaspoons chipotle chili powder, 1 teaspoon each ground cumin and coriander, 1 teaspoon grated lime zest, and 1/4 teaspoon granulated garlic.

Sugar with cinnamon
Mix 1.5 teaspoons of salt, 6 tablespoons of sugar, 1.5 teaspoons of cinnamon, 1/2 teaspoon each of ground ginger and allspice, 1/4 teaspoon each of ground cloves and nutmeg.

4. Roast the nuts


Preheat the oven to 180°C (350°F) and lightly grease a rimmed baking sheet with vegetable oil. In a large bowl, whisk 1 large egg white until foamy. Add the nuts and any other ingredients. Sprinkle with the prepared spice mixture and toss to coat. Spread the nut mixture in an even layer on the baking sheet and toast, stirring occasionally, for 15-20 minutes until golden brown; cool on the baking sheet.

5. Add more ingredients


Add no more than 1 cup to the nut mixture (choose 1-2, or skip this step); stir.

  • Raisin
  • Dried cranberries
  • Banana chips
  • Dried pineapple, chopped
  • Bacon, cook and crumble
  • Coconut flakes, toast
  • Popcorn
  • Dried chili peppers, crumbled (up to 1/4 cup)
