Step 3: Melt the chocolate
A. Make sure all tools are dry. Using a large knife, chop the chocolate into 1/2-inch pieces. Set aside 1 cup of chopped chocolate and place the rest in a microwave-safe bowl. (For two-color bars, set aside 1/2 cup of each chocolate and place the rest in two separate bowls.)
B. Microwave for 30 seconds, then stir with a rubber spatula. Continue heating and stirring in 30-second intervals until the chocolate is melted, about 3-5 minutes. (For two-color bars, melt each type of chocolate separately in 15-second intervals.)
IN. Immediately add the reserved chopped chocolate to the bowl; stir vigorously until the chocolate melts and becomes shiny. Don't worry if a few small lumps remain.
Step 4: Place on a baking sheet
Pour the chocolate onto the prepared baking sheet; using a rubber spatula, smooth it into a circle 25-30 cm in diameter and about 0.6 cm thick.
(For two-color bars, pour the 2 chocolates side by side onto a baking sheet; use a spatula to swirl them together.)
Step 5: Add toppings
Press crunchy topping and dried fruit/sweets into the chocolate, distributing them so that each piece of the bar combines different flavors and textures. Sprinkle with spices, if desired. Let sit at room temperature for about 1 hour to completely harden. (If the room is warm, you may need to freeze the bars for a few minutes.) Break into pieces and store in an airtight container at room temperature for 1-2 weeks.
