These chocolate cupcakes are a simplified version of the popular American Hostess cupcake, which celebrated its 100th anniversary in 2019. The original cupcake is a rich chocolate cake with a marshmallow filling, covered in chocolate icing, and decorated with a long curl of white icing on a dark background. The same dessert can easily be made in a mug in the microwave. This batch of batter makes four mug cakes. Just 15 minutes of effort, and you can enjoy these quick baked treats.

To prepare a serving, in a large bowl, whisk together 1/2 cup sugar, 1/4 cup buttermilk, 1 egg, and 1/2 teaspoon vanilla until smooth. Stir in 1/3 cup flour, 2 tablespoons unsweetened cocoa powder, 1/8 teaspoon baking soda, and a pinch of salt. Grease 4 small microwave-safe cupcake pans with butter and spread the batter evenly among them. Microwave one cupcake at a time until a toothpick inserted into the cupcake comes out clean, about 2 minutes.
