1. Prepare the cake base
Preheat oven to 190°C. Place store-bought or store-bought pie shells in a 23cm pie dish. homemade pie dough, crimp the edges to your liking; chill for 30 minutes. Line with foil, then weigh down with pie weights or dried beans. Bake for about 20 minutes, until the crust is set. Remove the foil and weights and continue baking for another 5-10 minutes, until light golden brown. Cool while you prepare the filling.

2. Choose vegetables
Prepare no more than 3 types of vegetables, 1/2-1 cup total. Transfer to a large bowl.
- Asparagus, roast and slice
- Broccoli, chopped and baked or steamed
- Kale, chopped and sautéed (or thawed spinach, drained)
- Roasted peppers from a jar or cherry peppers, chopped
- Frozen peas, thawed
- Mushrooms, cut into slices and fry
- Potatoes, grate and fry
- Cherry or grape tomatoes, cut in half
- Radicchio, chopped and sautéed
- Olives, remove pits and cut into slices (no more than 1/4 cup)
- Onions or shallots, sliced and fried
- Green onions, chopped

3. Add meat (optional)
Choose 1 or 2 types, prepare no more than 1/2 cup. Add to the bowl with the vegetables.
- Bacon, cook and crumble
- Sausages, cook and crumble
- Ham or salami, sliced
- Corned beef or pastrami, sliced
- Grilled chicken, shredded
- Sort out the crab meat
4. Add cheese
Grate or crumble (choose 1 or 2 types) to make 3/4-1 cup. Add to the vegetable mixture and stir.
- Swiss cheese, Gruyere or Jarlsberg
- Fontina
- Manchego
- Provolone
- Monterey Jack or Pepper Jack
- Cheddar
- Gouda (regular, aged or smoked)
- Mozzarella
- Brie
- Ricotta salad
- Goat cheese
- Feta
- Parmesan
5. Prepare the quiche
In a large bowl, whisk together 3 eggs, 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1 1/2 cups heavy cream, half-and-half, or milk. If desired, stir in 1–2 tablespoons chopped fresh herbs, 1/2 teaspoon paprika or chili powder, or a little grated lemon zest. Spread the vegetable and cheese mixture over the crust, then pour the egg mixture on top. Reduce the oven temperature to 350°F (180°C) and bake until the filling is set, 40–50 minutes. Cool for at least 30 minutes before slicing.
