Recipe:
1. Prepare the wings
Sprinkle the wings (about 1.8 kg), cut at the joint and with the tips removed, with 2 tablespoons of salt and a few pinches of pepper. Cook the wings according to the methods below.
Deep fryIn a large, wide saucepan or cauldron, heat vegetable oil to a depth of about 6 cm at 190°C (375°F). Toss the wings with 1/4 cup cornstarch, then fry in batches until golden brown, about 15 minutes. Remove with a slotted spoon and drain on paper towels.
Bake in the ovenPreheat oven to 220°C. Arrange the wings on two greased baking sheets. Bake until crispy, about an hour.
2. Coat the wings in one of the following sauces
Choose your favorite flavor:
Citrus-gingerIn a small saucepan, combine the juice of 2 oranges and 2 limes, 1/2 cup pineapple jam, 2 teaspoons grated ginger, 1/2 teaspoon salt, and a pinch of cayenne pepper. Bring to a boil, then simmer over medium heat until syrupy, about 8 minutes. Stir in 2 chopped green onions.
Beer barbecueIn a small saucepan, combine 350 ml of beer, 1/2 cup of barbecue sauce, and 2 tablespoons each of chipotle hot sauce and brown sugar. Bring to a boil and simmer over medium heat until syrupy, about 20 minutes.
Sriracha BuffaloMelt 220 g of butter and stir in 3/4 cup of Sriracha sauce.
Roasted Garlic and Balsamic Vinegar SauceTrim the tops of 2 heads of garlic, place each on foil, and drizzle with olive oil. Wrap and roast at 425°F (220°C) until soft, 45 minutes to 1 hour. Press the garlic cloves into a bowl. In a saucepan, combine 3 tablespoons balsamic vinegar, 2 tablespoons honey, 2 sprigs thyme, 1 teaspoon salt, 1/2 teaspoon red pepper flakes, and 1/3 cup water. Bring to a boil, then simmer over medium heat until syrupy, about 5 minutes. Remove from heat and stir in 3 tablespoons olive oil and the garlic.
Mango Curry Sauce. Mix 2/3 cup in a saucepan. mango chutney, 1 tbsp. apple cider vinegar, 1 tsp. curry powder, Jamaican jerk seasoning* and salt, 1/2 cup water, and a couple of pinches of pepper. Bring to a boil. Remove from heat and stir in 1/2 cup chopped cilantro.
* Jerk Spice Mix:
- 2 tbsp. ground coriander
- 2 tablespoons ground ginger
- 2 tbsp. l. brown sugar
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp coarse salt
- 1 tbsp. cayenne pepper
- 2 tsp crushed black pepper
- 2 tsp dried thyme
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 teaspoon ground cloves
3. Make a dipping sauce
Serve the wings with any of these sauces:
Sweet Chili MayonnaiseWhisk 3/4 cup Thai sweet and hot chili sauce with 1/2 cup mayonnaise, the juice of 1 lime, and 1/2 teaspoon salt.
Blue Cheese Ranch DressingWhisk together 1/4 cup each sour cream and mayonnaise, 2 ounces crumbled blue cheese, 2 tablespoons buttermilk, 2 minced garlic cloves, and 1 tablespoon chopped chives. Season with salt and pepper.
Sour cream with baconWhisk together 1 cup sour cream, 6 slices cooked bacon, chopped, 1/4 cup chopped chives, 2 tablespoons chipotle hot sauce, and 1 tablespoon Worcestershire sauce. Season the sauce with salt and pepper.
Spicy avocadoCombine 1 avocado, 1/4 cup plain Greek yogurt, 1 jalapeno, sliced and seeded, the juice of 2 limes, 2 tablespoons water, and 3/4 teaspoon salt. Puree until smooth.
Lemon DijonnaiseWhisk together 1/2 cup mayonnaise, 3 tablespoons Dijon mustard, the zest and juice of 1 lemon, 1/2 crushed garlic clove, and 1/2 teaspoon salt.
