Ingredients:

  • 1 and 3/4 cups premium wheat flour
  • 1/2 tsp coarse salt
  • 2 tablespoons of sugar
  • 180 g cold butter
  • 4 tsp apple cider vinegar or regular 5% vinegar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Sift the flour into a bowl, add salt and sugar, and mix. Add the butter and mash with a fork until coarse crumbs form. Add the vinegar and 1/4 cup very cold water and mix until smooth. Don't over-knead the dough, as the butter mustn't melt, otherwise the crust won't be crispy when baked.
  • Step 2
  • Wrap the dough in plastic wrap and flatten it slightly. Refrigerate the dough and chill for 1 hour.
