Vegetable sticks with cheese sauce


How to Make Vegetable Sticks with Cheese Sauce

Celery sticks are a great appetizer idea if you're serving a large crowd. Firstly, they're easy to make, and secondly, they're low in calories, making them perfect for passing the time while you wait for the main course without overeating. Fill celery sticks about 8 cm long with a cheese filling and pimento peppers. Then, you can decorate the appetizer however you like: top with raisins, dried cranberries, sprinkle with dill, or drizzle with hot sauce. Make several variations so your guests can try each one.


Ingredients:

  • 24 celery stalks, cut into 8cm pieces.
  • 220 g of cream cheese
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons adobo sauce from a jar of chipotle peppers
  • 1 teaspoon freshly ground black pepper
  • 450 g sharp cheddar, grated
  • 450 g Monterey Jack cheese, grated
  • 2 tablespoons fresh dill
  • 2 x 110g cans of chopped pimento peppers
  • 1 teaspoon coarse salt
  • For decoration: raisins, sriracha sauce, walnuts, cranberries
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In the bowl of a stand mixer, combine cream cheese, mayonnaise, Dijon mustard, adobo sauce, and black pepper and beat until well combined.
  • Step 2
  • Add the cheddar and Monterey Jack and gently stir until smooth. Use a rubber spatula to scrape down the sides of the bowl to ensure all ingredients are combined.
  • Step 3
  • Finely chop 1 tablespoon of dill. Add the chopped dill and pimento peppers to the cheese mixture, then season with salt and stir. Transfer to a container with a tight-fitting lid and refrigerate until set, at least 2 hours.
  • Step 4
  • Spoon the pimento cheese mixture onto the celery sticks. Garnish with raisins, Sriracha sauce, walnuts, cranberries, and dill to taste. Serve immediately or refrigerate until ready to serve.
