This low-carb and low-calorie, yet delicious and nutritious pasta is made with vegetable noodles and a rich turkey sauce. To cut the zucchini into thin noodles, you'll need a vegetable slicer or spiralizer. This healthy pasta Bolognese is a great choice for a midweek family dinner!

Ingredients:


Bolognese
  • 450 g of ground turkey
  • 1 can (450 g) of tomato sauce
  • 1 can (170 g) of tomato paste
  • 1 tbsp chili powder
  • 1.5 tsp coarse salt
  • 1 teaspoon Italian seasoning
  • 0.5 tsp freshly ground black pepper
  • 2 cloves garlic, crushed
  • 1 bay leaf
  • 1 large carrot, finely chopped
  • Half a yellow onion, finely chopped
  • 2 tablespoons chopped fresh parsley
  • Special equipment: vegetable slicer or spiralizer

Noodles
  • About 8 zucchinis
  • Cooking spray
  • Grated Parmesan cheese for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bolognese:

    In a saucepan, combine ground turkey, tomato sauce, tomato paste, chili powder, salt, Italian seasoning, pepper, garlic, bay leaf, carrots, onion, and 1/2 cup water. Don't brown the turkey; add everything at once. Cover, bring to a simmer, and cook over medium heat, stirring occasionally, until the sauce thickens slightly, about 1 hour. Remove the bay leaf and stir in the parsley.

  • Noodles:

    Using a spiralizer, slice the zucchini into thin noodles. Heat a large skillet over medium-high heat; spray with cooking spray or a little olive oil. Add the noodles and cook for about 1 minute. Season with salt and pepper to taste. Ladle in the sauce and toss to coat. Sprinkle with grated Parmesan and serve.
