Puree 800g canned whole peeled tomatoes, 2 cloves garlic and 1/2 teaspoon each salt and pepper; set aside. In a saucepan, cook 2 chopped garlic cloves and 2 tablespoons olive oil over medium-high heat for about 1 minute.

Add 1 pound ground beef; cook, breaking up any stuck pieces, until browned, about 5 minutes. Drain off all but 1 tablespoon of excess fat. Add 1/4 cup red wine and cook until evaporated, then stir in the tomato puree and reduce heat.

Simmer, stirring occasionally, until thickened, about 20 minutes; season with salt and pepper. Stir in 350g of cooked rigatoni or orecchiette, adding reserved pasta cooking water (up to 0.5 cups) if necessary to thin the thick Bolognese sauce.
