Even though this Bolognese sauce is quick to prepare, its flavor is incredibly rich and intense, as if it's been simmering on the stove for hours. It's all thanks to its secret ingredients: Worcestershire sauce and a spoonful of cocoa powder. Use a mixture of ground meats (beef, pork, veal) for the sauce, and the meat will be incredibly juicy. Serve the Bolognese sauce with cooked pasta, sprinkled with shaved Parmesan.

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 2 tbsp. l. olive oil
- 3 cloves garlic, finely chopped
- 1 medium onion, chopped
- 900 g of ground meat mixture (equal proportions of ground beef, pork, veal, or ground turkey)
- 3 tablespoons tomato paste
- 1.5 cups of white wine
- 2 tablespoons Worcestershire sauce
- 1.5 cups of milk
- 1 tbsp cocoa powder
- 450 g spiral pasta
- Shaved Parmesan and chopped fresh parsley, for serving

Cooking the dish according to the recipe:
- In a large heavy-bottomed saucepan, heat the olive oil over medium-high heat. Add the garlic, onion, 1 teaspoon salt, and 1/2 teaspoon black pepper and cook, stirring occasionally, until golden brown, 6-8 minutes. Stir in the ground beef and cook, breaking up any lumps with a wooden spoon, until all the liquid has evaporated and the meat is dry, 10-12 minutes.
- Add the tomato paste and cook, scraping the bottom of the pan, for about 4 minutes. Add the wine and Worcestershire sauce and bring to a boil. Simmer the sauce until the liquid has reduced by half, about 6 minutes.
- Add milk, cocoa powder, 3/4 teaspoon salt, and 1/2 teaspoon black pepper. Bring to a boil and simmer until the sauce thickens slightly, about 5 minutes.
- Meanwhile, bring a large pot of water to a boil and add salt. Cook the pasta according to package directions until al dente.
- Then drain the pasta and immediately transfer it to serving plates. Top with Bolognese sauce and sprinkle with shaved Parmesan and parsley.
