Microwave, covered, 1 halved and seeded spaghetti squash with 2 tablespoons water until tender, 15 minutes. Let cool slightly, then scrape out the flesh with a fork (it will form spaghetti squash).

Add 2 tbsp to one container. peanut butter, 1 tablespoon soy sauce, equal parts rice vinegar, equal parts lime juice, equal parts water, 1 teaspoon grated ginger, 1 clove garlic, and 1/4 teaspoon red pepper flakes and puree; stir the mixture into the pumpkin pulp. Season with salt. Garnish with chopped peanuts, mint, and coriander.
