Fire up the grill (or grab a grill pan) to make these juicy turkey sandwiches with roasted eggplant and hummus in a Middle Eastern-inspired pita. The turkey is cooked as a patty, so paired with iceberg lettuce and vegetables, it'll be perfectly juicy.

Ingredients:

  • 450 g lean ground turkey
  • 1 small onion (3/4 thinly sliced, 1/4 minced)
  • 2 cloves garlic, crushed
  • 0.5 tsp ground coriander
  • 0.5 tsp chili powder
  • 1 large eggplant, sliced ​​into 1cm thick circles.
  • 1/3 cup extra-virgin olive oil, plus more for greasing the grill
  • 4 pitas, tops cut off
  • 3 cups shredded iceberg lettuce
  • 3/4 tbsp. hummus with olives
  • Vegetable chips, for serving
Substituting ingredients

Preparation:

    Step 1
  • Preheat a grill or grill pan over medium-high heat. In a large bowl, combine the ground turkey, chopped onion, garlic, coriander, chili powder, 1 teaspoon salt, and a pinch of freshly ground black pepper. Form into four 10cm (4-inch) patties. Transfer to a baking sheet and refrigerate until ready to grill.
  • Step 2
  • Meanwhile, place the eggplants on a baking sheet lined with paper towels. Sprinkle with salt and let sit for 10 minutes to remove excess water, then pat dry.
  • Step 3
  • Brush the eggplant and grill grate with olive oil. Grill the eggplant until tender and grill marks appear, 4-5 minutes per side. Meanwhile, grill the turkey cutlets until cooked through and grill marks appear, 2-3 minutes per side.
  • Step 4
  • Top a pita with some lettuce, a few eggplant slices, a turkey patty, and chopped onion. Add 3 tablespoons of water to the hummus, then spoon it over the pita. Serve with vegetable chips.
