Pita (lavash)

A traditional Middle Eastern baked good, it's a round, flat, unleavened bread made from wheat flour. In Russia and Georgia, it's called "lavash" and is shaped like a round loaf topped with meat, salad, and cheese.
When Arabic pita is baked, an air pocket is created into which any filling can be placed. Pita is used in appetizers and pairs well with cheese and vegetables.
