Strawberries with balsamic reduction aren't as classic a pairing as whipped cream, but you should definitely try it if you're looking for a new taste experience. The reduction is easy to make yourself using honey and balsamic vinegar—the king of all vinegars, with its exquisite, rich flavor. Dress fresh strawberries with it and serve with a creamy cheese spread. This fruit salad makes a wonderful light dessert or an appetizer to pair with white sparkling wines.

Bring to a boil and simmer for 4 minutes 1/3 cup balsamic vinegar with 2 tablespoons honey, 1 bay leaf, and a pinch of salt. Then remove the bay leaf and let the syrup cool. Using a mixer, beat 1 cup mascarpone, 1/2 cup heavy cream, 1 tablespoon sugar, and 1/4 teaspoon vanilla until soft peaks form. Toss 6 cups halved strawberries with half the balsamic syrup. Serve with whipped cream and the remaining syrup.
