Pasta marinara in a rich tomato sauce is one of the easiest Italian dishes to prepare, and it's even easier and quicker to make in a slow cooker. It only takes 10 minutes of active cooking, and the appliance does the rest. The beauty of this recipe is that the pasta isn't made with store-bought marinara sauce (like most quick versions), but with tomatoes and spices—just right. Serve drizzled with butter and generously sprinkled with grated Parmesan.

Ingredients:

  • 3 tbsp. l. olive oil
  • 3 cloves garlic, thinly sliced
  • A pinch of red pepper flakes
  • 800 g canned whole peeled San Marzano tomatoes
  • 450 g penne pasta (feathers)
  • 2 tablespoons unsalted butter
  • 1/4 tbsp. grated parmesan
  • Special equipment: multicooker
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Set the slow cooker to high heat for sautéing. Add the olive oil; once it shimmers, add the garlic and red pepper and sauté until fragrant, about 1 minute. Add the tomatoes, 2 cups of water, and 2 teaspoons of salt.
  • Step 2
  • Following the manufacturer's instructions, close the lid and prepare the multicooker for use. Set the pressure cooker to high pressure for 5 minutes. Once the pressure cooker cycle is complete, follow the manufacturer's instructions to quickly release the pressure and wait for the cycle to complete.
  • Step 3
  • Being careful not to burn yourself with residual steam, open and remove the lid. Crush the tomatoes with a wooden spoon. Stir in the pasta.
  • Step 4
  • Set the pressure cooker back to high pressure for 5 minutes. Once the cycle is complete, follow the manufacturer's instructions to quickly release the pressure and wait for the cycle to complete. Being careful not to burn yourself with residual steam, open and remove the lid. Add the butter and Parmesan cheese.
