In this quick beef stroganoff recipe, the Food Network team swaps traditional beef for chicken thighs. However, the classic flavor and texture of the original dish are preserved, thanks to the paprika-infused meat simmered in a rich sour cream and mushroom sauce, and served with egg noodles.

Ingredients:

  • 340 g wide egg noodles
  • 570 g of skinless, boneless chicken thighs, cut into pieces
  • 110 g (about 2 cups) sliced ​​porcini or cremini mushrooms
  • Salt and freshly ground black pepper
  • 3 tbsp (45 g) butter
  • 1 small onion, chopped
  • 2 tbsp. flour
  • 1 teaspoon paprika, plus a little more for sprinkling
  • 1 tbsp. Worcestershire sauce
  • 1/2 cup sour cream, plus extra for serving
  • 1 cup low-sodium, fat-free chicken broth or mushroom broth
  • 2 tablespoons chopped fresh parsley
Substituting ingredients

1/2 cup (st.) - 125 ml.

1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions, then drain.
  • Step 2
  • Meanwhile, melt 2 tablespoons (30 g) butter in a large skillet over medium-high heat. Add the onion and cook gently until softened, about 2 minutes.

    Add the mushrooms and cook, stirring, until they begin to brown, about 2 minutes. Add the remaining tablespoon of butter, chicken, flour, paprika, 1 teaspoon of salt, and 1/4 teaspoon of pepper. Cook, stirring, until the chicken is browned, about 3 minutes.

  • Add the chicken broth and Worcestershire sauce, bring to a simmer, and simmer until the sauce thickens, about 5 minutes. Stir in the sour cream and season with salt and pepper. Continue simmering until the chicken is cooked through, about 2 minutes more.

    Divide the noodles among bowls. Top with chicken, sprinkle with parsley, sour cream, and paprika.
