For a more presentable dish, don't just serve a bowl of peas. It's better to roast them and sprinkle them with mint, lime zest, and hot jalapeño. This will add a richer and more interesting flavor. Heat a large cast-iron skillet over high heat. Add 1 tablespoon olive oil, 1 pound snap peas, and 1/4 teaspoon coarse salt. Cook, stirring occasionally, for 3 minutes, until crispy. Stir in 1 small red jalapeño pepper, seeded and thinly sliced, 1/3 cup chopped mint, and the grated zest of 1 lime. Sprinkle with flaky sea salt.
