This potato salad is packed with flavor: crispy bacon, onions cooked in bacon grease, and tart apple cider vinegar. The potatoes are added to the salad while still warm, so they soak up all the flavors perfectly.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 900 g white new potatoes, cut in half
  • 8 slices bacon, cut into strips
  • 1 onion, diced
  • 1/2 cup chicken broth
  • 1/4 cup apple cider vinegar
  • 1 bunch chives, finely chopped

Cooking the dish according to the recipe:

  1. Place the potatoes in a medium saucepan, cover with water, and season generously with salt. Bring to a boil, then reduce to a simmer and cook until tender, about 20 minutes. Drain and set aside.
  2. Heat a small amount of olive oil in a large skillet. Add the bacon and heat to medium. Once the bacon is crispy, add the onion and cook until softened and fragrant, 7 to 8 minutes. Add the broth and vinegar.

  3. Add the potatoes while still warm and cook until the liquid is absorbed, about 8 minutes. Taste and adjust the salt to taste, if needed. Add the onion and serve the salad warm or at room temperature.
