To keep this healthy, vitamin-rich spinach salad from feeling too boring, add a splash of flavor with fried bacon and juicy red grapes. Roasted pistachios and bacon add a pleasant crunch. A French dressing of finely chopped onion, wine vinegar, mustard, and bacon fat, used in place of vegetable oil, adds the tartness needed for a full-bodied flavor. Dress the salad while the fat is still warm and hasn't hardened.

In a skillet, fry 3 slices bacon, diced, until crisp.
