Spinach Salad with Warm Bacon Dressing - A Detailed Recipe.


Ingredients:

  • 1 tsp. sugar or honey
  • 1 teaspoon Dijon mustard
  • 5 slices of bacon, roughly chopped
  • 1/4 cup white wine vinegar
  • Coarse salt and freshly ground pepper
  • 2 tbsp. extra virgin olive oil
  • 450 g fresh spinach (not baby), tough stems trimmed
  • 2 cups seedless red grapes, halved
  • 110 g crumbled blue cheese (about 3/4 cup)
  • Croutons for topping
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium skillet over medium heat, fry the bacon for 9-11 minutes until crisp. Drain on paper towels. Keep the rendered fat from the pan.
  • Step 2
  • Add wine vinegar, sugar or honey, Dijon mustard, and 1/4 teaspoon each of salt and pepper to the reserved fat. Slowly whisk in the olive oil until the dressing emulsifies.
  • Step 3
  • Place the spinach in a large bowl and pour the warm salad dressing over it. Add the grapes, blue cheese, and reserved bacon, and toss to combine. Season with salt and pepper. Arrange the croutons on top of the salad.

    This dish is paired with Chardonnay wine.
