A quick, yet delicious and juicy salad with a warm dressing. Its base is lettuce leaves. Use both red and green for a more interesting appetizer. The greens are drizzled with a hot dressing of sweet grape tomatoes sautéed in olive oil with shallots and lemon juice, allowing the leaves to wilt slightly. Just before serving, top with crispy croutons and crumbled blue cheese. The croutons can be baked in advance.

- 1 head red leaf lettuce, torn into pieces
- 1 head romaine lettuce, torn into pieces
- 0.5 cup crumbled blue cheese

Cooking the dish according to the recipe:
- Preheat oven to 220°C.
Prepare the croutons:
Toss the bread cubes with 1 tablespoon of olive oil and place on a baking sheet. Season with salt and pepper. Bake until golden brown, about 8 minutes.Meanwhile, prepare the dressing:
In a medium skillet, heat the remaining 1/3 cup olive oil over medium heat. Add the shallots and tomatoes and cook until softened, about 5 minutes. Add lemon juice, salt, and pepper.- Combine the salad in a large bowl. Drizzle with the warm dressing, add the croutons, and toss gently. Sprinkle with crumbled blue cheese.
