- 1 large head of red onion
- 1/4 cup lime juice
- 1/2 tbsp. macadamia nut oils

Cooking the dish according to the recipe:
- Preheat oven to 180°C. Toss the potatoes with a little olive oil, season with salt and pepper.
Place on a baking sheet and bake until tender and golden brown, about 40 minutes. Shake the baking sheet halfway through to ensure even baking.
Place the bacon on another baking sheet with a rack on top, bake for 25-30 minutes, cool and slice. - Place the onion on a large piece of aluminum foil. Drizzle with olive oil and season with salt and pepper. Wrap the onion tightly in the foil and roast until soft and lightly browned, about 50 minutes to an hour. Cool slightly. Chop the onion when it's cool enough to avoid burning your hands.
- In a small bowl, whisk together the lime juice and macadamia oil. In a large bowl, combine the potatoes and onions and toss with the dressing. Sprinkle with bacon, herbs, and season with salt and pepper to taste.
