Lentils are a great base for a filling, nutritious, and healthy salad, rich in protein and essential vitamins and minerals. For this recipe, you'll need green lentils. They stay fluffy and don't overcook. Fried bacon adds a fantastic flavor. Dress the salad with sherry vinegar, grainy mustard, and olive oil and serve as a side dish or as a main course for a light dinner.

Cooking the dish according to the recipe:
- In a saucepan, fry 2 slices of bacon; remove with a slotted spoon. Add 2 chopped celery stalks, 2 minced garlic cloves, and 1 sliced red onion; fry for 4 minutes.
- Add 4 cups water and 1 cup dried green lentils (rinsed); simmer until tender, 30 minutes.
