Cook 1 cup French green lentils in salted boiling water for about 25 minutes, adding 250 grams of green beans in the last minute of cooking; drain and let cool.
In a large bowl, combine 3 tablespoons white wine vinegar and 1 tablespoon each minced shallot, Dijon mustard, and chopped thyme; whisk until the dressing is combined, slowly whisking in 1/3 cup olive oil.
Add the lentils, green beans, 8 sliced radishes, 3 slices pork belly (sliced into strips and cooked), 2 cups torn frisee (curly endive), and 1/2 cup pitted olives. Season the green lentil salad with salt and pepper and toss to combine.
