Green Papaya Salad (Som-tam)

Thai som tam salad, made with unripe papaya, is considered one of the most delicious dishes in the world, according to CNN. It offers a balanced combination of all four flavors: spicy, sweet, sour, and salty. Ingredients with different textures also harmoniously coexist. In addition to green papaya, the salad also includes other vegetables or seafood, which vary slightly by region. But the simplest version is to slice the papaya into long, thin strips, mix with tomatoes, blanched green beans, chopped peanuts, and fresh cilantro, and drizzle with an Asian dressing made with Thai fish sauce, lime juice, and chili pepper.
Ingredients:
- 2 large green papayas (450g each), peeled, seeded and cut into thin strips
- 220 g green beans
- 3 tomatoes Cream
- 0.5 cups roasted unsalted peanuts
- 1/4 cup Thai fish sauce
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 2 tablespoons of sugar
- 1 teaspoon crushed garlic
- 2 tsp red pepper flakes
- 1/4 cup coarsely chopped cilantro leaves

1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- Step 1
- Bring a large saucepan of salted water to a boil. Add the beans and cook for 2 minutes, then transfer to cold water. Drain and cut each bean in half. Halve the tomatoes lengthwise and remove the seeds. Cut the halves into 0.3 cm thick strips. Coarsely chop all but 2 tablespoons of the peanuts. Step 2
- In a bowl, combine the papaya with the beans, tomatoes, chopped peanuts, fish sauce, lemon and lime juice, sugar, garlic, red pepper flakes, and 3 tablespoons of cilantro. Top with the remaining peanuts and cilantro. Serve with Thai kebab "Satay" from pork.
