  • 2 large or medium green papayas, peeled, seeded and coarsely grated or thinly sliced ​​into strips
  • 2 carrots, peeled and coarsely grated or cut into thin strips
  • 1/2 cup fresh lime juice
  • 3 tablespoons plus 1 teaspoon Thai fish sauce
  • 1/4 cup chopped shallots
  • 3 Thai bird's eye or serrano chilies, seeded and chopped
  • 3 tablespoons coconut sugar or golden cane sugar
