Ingredients:
- 650 g beef skirt steak (lean trimmed flank steak), cut into 4 pieces
- 110 g of thin rice noodles
- 1/4 cup lime juice (from about 3 limes)
- 2 tablespoons of sugar
- 2 tsp Sambal oelek (Asian chili sauce)
- 1 teaspoon fish sauce
- 1 cucumber, cut in half lengthwise and then thinly sliced
- 1 red onion, thinly sliced
- 4 cups watermelon, diced
- Coarse salt and ground pepper
- Vegetable oil for greasing
- 1/2 cup chopped cilantro

Preparation:
- Step 1
- Bring a medium saucepan of water to a boil. Add the noodles and cook according to package directions. Drain and rinse the noodles with cold water. Place them in a sieve and let them drain completely. Step 2
- In a large bowl, combine lime juice, 3 tablespoons water, sugar, sambal oelek, and fish sauce. Add cucumber, onion, watermelon, and noodles. Season with salt and pepper, toss, and set aside. Step 3
- Preheat the grill to medium-high. Season the steak with salt and pepper. Brush the grill with vegetable oil. Grill the steak for 3 minutes on each side, until the meat is charred and medium. Transfer it to a cutting board and let it rest for 5 minutes, then slice thinly. Step 4
- Add a few tablespoons of cilantro to the noodle salad, then toss. Top with the steak and reserved cilantro.
