Ingredients:

  • 460 g beef pulp, cut into 2 flat pieces
  • 4 tsp mild mustard
  • Coarse salt and freshly ground black pepper
  • 3 tbsp. l. olive oil
  • 230 g porcini mushrooms, each mushroom cut in half or into quarters
  • 1/4 cup finely grated Parmesan cheese, plus more for sprinkling
  • 3 tablespoons low-fat sour cream
  • 2-3 teaspoons pickled green peppercorns, drained and chopped, plus 1 teaspoon brine from the jar
  • 2 large heads of cabbage romaine lettuce, chop
  • 3 stalks celery, sliced
  • 1 cup cherry tomatoes, each cut in half or quarters
  • 2 cups whole grain croutons
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Rub the meat on all sides with 1 teaspoon of mustard and 1/4 teaspoon each of salt and black pepper. Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat. Place the meat in the skillet and cook for 5-6 minutes on each side. The meat will be medium-rare, with light pink juices. Transfer to a cutting board. Wipe the skillet dry.
  • Step 2
  • Add 1 tablespoon of olive oil to the skillet, heat it, then add the mushrooms and cook, without stirring, until golden brown, about 2 minutes. Season with salt and continue cooking, stirring, for another 3 minutes, until the mushrooms begin to soften.
  • Step 3
  • In a large bowl, combine the Parmesan cheese, sour cream, 3 tablespoons water, the remaining 1 tablespoon olive oil, 3 teaspoons mustard, green peppercorns, brine, and 1/4 teaspoon each salt and black pepper. Add the mushrooms, romaine lettuce, celery, tomatoes, and croutons and toss to combine. Cut the meat into pieces and add to the bowl, tossing to combine. Set aside. warm salad into bowls and sprinkle with plenty of Parmesan.
