Ingredients:


For the salad:
  • 1 head of cabbage romaine lettuce, cut
  • 1/2 cup chopped red onion
  • 2 plum-shaped tomatoes, cut
  • 4 slices of white bread, cut into large cubes
  • 1 tbsp (15 g) unsalted butter
  • 6 strips of bacon
  • 6 sprigs of fresh thyme
  • 1/4 cup light brown sugar
  • 1 teaspoon paprika
  • Grated zest of 1 lemon
  • 1 teaspoon ground black peppercorns

For filling:
  • 1/2 cup mayonnaise
  • 1 - 2 tbsp. maple syrup
  • 4 tsp whole grain mustard
  • 1 tbsp fresh lemon juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the salad: Combine onions, tomatoes and romaine lettuce in a salad bowl and let sit.
  • Step 2
  • Prepare the crackers: Fry the bread in a shallow frying pan over medium heat until golden brown, about 6 minutes. Let cool.
  • Step 3
  • Prepare the bacon: In a small bowl, combine brown sugar, black pepper, paprika, lemon zest, and bacon. Place sprigs of fresh thyme on a parchment-lined baking sheet, topping each with a strip of bacon.

    Bake the bacon in a preheated oven at 180°C (350°F) until crisp, about 20 minutes, or until caramelized. Remove the pan from the oven, let cool, and discard the thyme. Cut the bacon into strips crosswise and add to the salad.
  • Step 4
  • Prepare the salad dressing: beat the mayonnaise, maple syrup, mustard, and lemon juice in a medium bowl. Add the dressing to the salad and toss to combine.
  • Step 5
  • Sprinkle the salad with breadcrumbs. Divide into servings.
