This hearty salad is made with cooked white rice, bursting with veggie richness and vibrant Mexican flavors. Toss the rice with lettuce, halved cherry tomatoes, and green onions. Add a touch of tartness with queso fresco, and a dressing of lime juice, smoky chipotle sauce, and agave nectar (or syrup) ties everything together. Toasted pumpkin seeds add a touch of class to this Mexican salad.

In a large bowl, combine 3 tablespoons of lime juice, 2 teaspoons of chipotle hot sauce, 2 teaspoons of agave nectar, and 1/2 teaspoon of coarse salt. Stir in 1/4 cup of olive oil. Add 1 1/2 cups of cooked white rice, 1 shredded romaine lettuce heart, 3 chopped green onions, 1 cup of halved cherry tomatoes, 1/2 cup of crumbled queso fresco, and 1/4 cup of toasted pumpkin seeds.
