Ingredients:

  • 8 thick slices of bacon
  • 1/4 cup fresh, tightly packed leaves basilica
  • 2 tbsp. l. olive oil
  • 1 teaspoon freshly squeezed lemon or lime juice
  • Coarse salt and freshly ground pepper
  • 3 tablespoons mayonnaise
  • 8 thick slices of multigrain bread
  • 2 peaches, halved and pitted, thinly sliced
  • Young arugula, for sprinkling
  • Gherkins or any small pickled cucumbers, for serving (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Fry the bacon in a skillet over medium heat until crisp, about 8 minutes. Transfer the bacon to a paper towel-lined plate, then cut each slice into two pieces.
  • Step 2
  • Combine basil, olive oil, lemon juice, 1 tablespoon water, 1/4 teaspoon salt, and pepper to taste in a food processor. Blend until smooth, then add the mayonnaise and pulse again.
  • Step 3
  • Toast the bread, then spread the basil mixture on the slices. Top half the slices with peaches, bacon, and arugula, then top with the remaining slices. Serve with pickles.
