Salad

- 0.5 cup peeled green apples, cut into thin strips
- 0.5 cup crumbled blue cheese

- 1/4 cup toasted walnuts
- 2 tablespoons fresh tarragon leaves
- 1/4 tbsp. soy-sherry dressing, see recipe below
Soy-sherry dressing
- 0.5 cup sherry vinegar
- 1/4 cup soy sauce
- 1 tbsp Dijon mustard
- 0.5 tsp chopped shallots
- 1 egg yolk
- 1 tbsp. grape seed oil

Cooking the dish according to the recipe:
- In a medium bowl, combine the endive, apples, blue cheese, onion, walnuts, and tarragon. Add the soy-sherry dressing (adjust the amount to taste), and season with salt and pepper.
