Endive, also known as chicory, is prized for its vitamin content, dietary fiber, and juiciness, making it an excellent ingredient for healthy salads. To add a vibrant flavor to your endive salad, add thinly sliced ​​apples, crumbled blue cheese, walnuts, and a delicious dressing made with soy sauce and sherry vinegar, egg yolk, Dijon mustard, onion, and grapeseed oil. This salad harmoniously balances sweetness, tartness, and savory flavors. It's very juicy and a perfect accompaniment to meat.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Salad

  • 4 cups thinly sliced ​​endive (place in cold water to prevent oxidation)
  • 0.5 cup peeled green apples, cut into thin strips
  • 0.5 cup crumbled blue cheese
  • 0.5 cup thinly sliced ​​red onion
  • 1/4 cup toasted walnuts
  • 2 tablespoons fresh tarragon leaves
  • 1/4 tbsp. soy-sherry dressing, see recipe below

Soy-sherry dressing

  • 0.5 cup sherry vinegar
  • 1/4 cup soy sauce
  • 1 tbsp Dijon mustard
  • 0.5 tsp chopped shallots
  • 1 egg yolk
  • 1 tbsp. grape seed oil

Cooking the dish according to the recipe:


  1. In a medium bowl, combine the endive, apples, blue cheese, onion, walnuts, and tarragon. Add the soy-sherry dressing (adjust the amount to taste), and season with salt and pepper.
  2. Soy-sherry dressingIn a blender, combine the sherry vinegar, soy sauce, Dijon mustard, shallot, and egg yolk. While blending, pour in the grapeseed oil. Season with pepper (the salt from the soy sauce will be enough to season the dressing).
