A delicious side dish of fried green peas with pancetta and onions. Crispy pancetta contrasts perfectly with the tender butter-sautéed peas, while orange juice and zest impart a wonderfully sweet, citrusy aroma, complemented by the freshness of parsley. This delicious, rich side dish is perfect for any meat dish, whether for a holiday or a weekday dinner.


Ingredients:

  • 3 cups fresh green peas (about 0.5 kg)
  • 110 g pancetta, diced (1 cup)
  • 1 shallot, chopped
  • 1 teaspoon crushed garlic
  • Grated zest and juice of 1 orange
  • 1/4 cup chopped parsley
  • 1 tbsp (15 g) butter
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large skillet over medium-low heat, cook the pancetta until crisp, about 5 minutes. Add the shallot and garlic, cook for 1 minute, then stir in the orange juice.
  • Step 2
  • Increase the heat to medium, add the peas, and cook until tender, about 3 minutes. Remove the pan from the heat and stir in the orange zest, parsley, and butter. Taste and add a little salt if needed. You probably won't need to add much salt, though, as the pancetta adds its own saltiness to the dish.
