This is a vinegar made from various types of rice: white, black, or red rice, or from rice wine (sake), through fermentation. Rice vinegar comes in a variety of colors, from clear to red and brown, and has varying strengths. It differs from distilled vinegar very soft and sweet taste.

Rice vinegar is used in marinades for meat and fish, as a seasoning for cooked rice for sushi, as a salad dressing, and in sauce preparation; drinks are made from vinegar of black rice varieties.
