This delicate and healthy rice pudding is a perfect breakfast for some, a dessert for others, but no one will remain indifferent! It's made with round arborio rice, which is first simmered in water on the stovetop, then steeped in soy milk, sugar, and a cinnamon stick, and finished in the oven. Once cooled, the rice pudding will be very creamy and thick, moderately sweet and aromatic. For a sweeter option, you can top your serving with a spoonful of condensed milk.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 tbsp. arborio rice
  • 2 tbsp of water
  • 3 cups vanilla soy milk
  • 1/4 cup sugar
  • A pinch of salt
  • 1 cinnamon stick
  • 0.5 tsp vanilla extract
  • 0.5 tsp ground cinnamon + extra for sprinkling
  • 1/4 tsp ground nutmeg
  • 2 tbsp + 2 tsp condensed milk with sugar

Cooking the dish according to the recipe:


  1. Preheat oven to 190°C.
  2. In a heavy, ovenproof medium saucepan, bring the water to a boil. Add the rice, cover, and simmer for 20 minutes, until almost done. In a large bowl, combine the soy milk, sugar, and salt. When the rice is cooked and still hot, stir in the soy milk mixture and cinnamon stick. Cover, place in the oven, and bake for 45 minutes.

  3. Remove the pan from the oven, remove the lid, and discard the cinnamon stick. Stir in the vanilla, cinnamon, and nutmeg. The pudding will be slightly runny; the liquid will continue to soak into the rice and thicken as the pudding cools. Divide among 8 bowls, topping each with 1 teaspoon of condensed milk. Sprinkle with cinnamon and nutmeg, if desired.
  4. Serve the pudding warm or at room temperature.
