Chicken in Thai basil sauce - a detailed recipe.

- 2 tbsp. l. canola oil
- 1 medium onion, sliced into rings
- 1 sliced red bell pepper
- 1 small serrano chili pepper, sliced into rings
- 1 tbsp chopped garlic
- 2 tsp. brown sugar
- 2 tsp low-salt soy sauce
- 2 teaspoons fish sauce
- 1 cup fresh basil leaves

Cooking the dish according to the recipe:
- Place rice in a medium saucepan and add 6 cups of cold water.
Place the saucepan over medium-high heat, cover, and bring the contents to a boil. Reduce the heat to a simmer and cook until the rice has absorbed the water, 20-30 minutes. Add the chili and garlic and cook for 1 minute. - Pour 2 tablespoons of water into a bowl, add sugar, soy sauce, and fish sauce. Stir and pour over the chicken and onion. Cook for another minute. Add the basil and remove from the heat once it's softened. Add lime juice to the chicken mixture and stir. Serve hot with rice.
