A little red wine adds a unique flavor to this thick sauce made with fresh vegetables and thyme.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 chicken (1.5 – 1.8 kg), cut into pieces
  • 1 can (800 gr.) plum tomatoes
  • 1/3 cup dry red wine
  • 1/4 cup wheat flour
  • 2.5 teaspoons of salt
  • 1 and 1/4 teaspoons freshly ground black pepper, divided
  • 1/4 cup olive oil
  • 1 diced celery stalk
  • 1 diced carrot
  • 4 finely chopped garlic cloves
  • 1 medium onion, coarsely chopped
  • 3 sprigs of fresh thyme
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley leaves

Cooking the dish according to the recipe:


  1. In a shallow bowl, combine flour, 1 teaspoon salt, and 1/2 teaspoon pepper. Rinse the chicken and pat dry with paper towels. Lightly coat the chicken in the flour mixture, a few pieces at a time, shaking off any excess.
  2. Heat oil in a large skillet over medium heat. Add the chicken. Cook for 4-5 minutes on each side. Transfer to a plate. Repeat with the remaining chicken.

  3. Add the onion to the pan and fry for 2 minutes. Add the carrots, celery, garlic, thyme, and bay leaf. Fry for 10 minutes.

    Mash the tomatoes and add them to the vegetables. Pour in the red wine, add the remaining salt and pepper, and bring to a boil. Add the chicken, reduce the heat, and cover the pan with a lid. Simmer for 45 minutes, turning the chicken pieces occasionally. Remove and discard the bay leaf. Stir in the parsley and serve in individual bowls.
