Chicken Cacciatore is an Italian dish that translates to "hunter's chicken." Hunters typically cook the game they've caught with vegetables, mushrooms, and aromatic herbs. The dish is quite simple, yet delicious. Cacciatore begins by searing the meat. Chicken breast is best for this recipe, as it makes it easy to eat in a sandwich. Brown the seasoned meat, then simmer the vegetables separately in wine. Add the chicken to the vegetables, cook until done, and then place the finished dish into long, hearty sub sandwich buns. Ingredients:

  • 4 pieces of skinless and boneless chicken breast, 200-250 g each
  • Olive oil for drizzling chicken + 2 tbsp.
  • Grill seasoning mix or salt and pepper
  • 4 sub sandwich buns, cut in half
  • 2 cloves garlic, peeled
  • 1 teaspoon red pepper flakes
  • 2 large mushroom caps, sliced
  • 1 sweet green pepper, seeded and chopped
  • 1 large onion, chopped
  • 1 tsp dried oregano, 1/3 handful
  • 0.5 cups dry red wine or chicken or beef broth
  • 1 can (400 g) of pureed tomatoes
  • 2 - 3 tbsp. l. chopped parsley
  • 150 g thinly sliced ​​provolone cheese
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat a grill pan or large skillet. Drizzle the chicken with oil and rub it in. grill seasoning mixture or salt and pepper. Fry in a frying pan for 6 minutes on each side.

  • Preheat oven to broil and lightly toast buns on a baking sheet.
  • Step 3
  • Heat a large skillet over medium heat. Add 2 tablespoons of olive oil, garlic, red pepper flakes, mushrooms, bell pepper, onion, and oregano. Saute the vegetables, season with salt and pepper. Cook for 5 minutes, then pour in the wine or broth. Scrape the bottom of the pan with a wooden spoon or spatula to remove any browned bits. Stir in the tomatoes and parsley.
