Pepito is the most popular street food in Venezuela, and is also often found in Mexican eateries. A bolillo bun is slit in half on the side and filled with fried marinated meat and vegetables. A baguette or any other crispy burger bun can be used instead of a bolillo. The spicy orange marinade makes the chicken tender and flavorful. Serve with sliced ​​avocado, lettuce, and a drizzle of vinaigrette. This delicious and filling snack will keep you full for a long time.


Ingredients:

  • 900 g thinly sliced ​​chicken breast
  • 2 tbsp chopped thyme
  • 1 tbsp. l. crushed dried oregano
  • 1 cup orange juice, or freshly squeezed juice from 3 oranges
  • 2 tablespoons of vegetable oil
  • 1 cup mayonnaise
  • 1 tablespoon crushed chipotle peppers in adobo sauce
  • 1 clove garlic, minced
  • 4 bolillo buns
  • Avocado slices, for serving
  • Shredded iceberg lettuce for serving
  • Olive oil for serving
  • Red wine vinegar for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the chicken in a 22x32 cm glass dish. Season generously with salt and pepper. Add the oregano and thyme and mix thoroughly. Pour orange juice over the chicken and let it marinate for 10 minutes.
  • Step 2
  • Heat vegetable oil in a grill pan over high heat. When hot, add the chicken and fry for 5 minutes on one side, then flip and fry for another 5 minutes until crispy. Remove the pan from the heat and cover with a lid.
  • Step 3
  • In a medium bowl, combine mayonnaise, chipotle pepper, and garlic. Season with salt and set aside.
  • Step 4
  • Make a slit in the side of each bolillo bun and spread 1 tablespoon of mayonnaise on the inside. Toast the buns over medium heat for 1 minute on each side. Then fill the slits with chicken, avocado slices, and lettuce. Drizzle the filling lightly with olive oil and vinegar. Close the sandwiches and serve immediately.
