The filling is made with pre-roasted chicken, so you won't have to spend hours at the stove. Simply shred it and warm it up in a spicy creamy sauce. The flavor will be rich and vibrant, as if you've braised it for a long time. Serve on savory Belgian waffles as an appetizer.

Ingredients:


Stewed chicken
  • 3 tablespoons unsalted butter
  • 1/4 tsp. Cajun seasoning
  • 2 green onions, thinly sliced
  • 3 tbsp. flour
  • 1 cup chicken broth
  • 1 cup whole milk
  • 1 grilled chicken, skinless and boneless, meat shredded (about 4.5 cups meat)
  • Hot sauce

Waffles
  • 3 cups premium flour
  • 2 tablespoons of sugar
  • 2 tsp baking powder
  • 2 teaspoons coarse salt
  • 2 cups sour cream
  • 1 cup whole milk
  • 110 g unsalted butter, melted
  • 6 large eggs, lightly beaten
  • Cooking spray for waffle iron
  • Special equipment: waffle iron
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Stewed chicken: In a medium saucepan, melt the butter over medium-high heat.

    Add Cajun seasoning Add the scallions and green onions and cook, stirring, for 1 minute. Add the flour and cook, stirring, for another 1 minute. Add the chicken broth and milk and, stirring frequently, bring to a boil, then cook until the sauce thickens, about 2 minutes. Add the shredded chicken and stir to heat through. Season with salt and pepper, then add a few drops of hot sauce. Keep warm or reheat before serving.

  • Waffles: Preheat the waffle iron.

    In a bowl, combine the flour, sugar, baking powder, and salt. In another large bowl, combine the sour cream, milk, butter, and eggs. Add the flour mixture to the wet mixture and knead until smooth.
  • Step 3
  • Spray a waffle iron with cooking spray and cook the waffles according to the manufacturer's instructions. Cut or break the waffles in half (2 squares per sandwich) and evenly spread the hot chicken on them.
