Classic Cordon Bleu is considered a restaurant dish, but this recipe is incredibly simple and makes a perfect sandwich filling. Cooking the dish according to the recipe:
- Preheat the oven to broil. Line a baking sheet with foil and arrange the chicken breasts evenly in the center.
Brush the chicken with 1 tablespoon of olive oil and season with salt and black pepper. Grill, rotating the pan as needed, until the chicken is evenly cooked and lightly browned, 2-3 minutes. Turn the chicken over and continue grilling until cooked through, another 2-3 minutes. - Remove the baking sheet from the oven and top each chicken piece with 1 slice of ham and 2 slices of mozzarella. Broil in the oven until the cheese is melted, 1-2 minutes. Season with salt and drizzle with olive oil.
- Meanwhile, cut the baguette crosswise into 4 equal pieces, then cut it in half horizontally. Brush the bottom halves with butter and the top halves with mustard. Mix the watercress with the remaining 0.5 tablespoons of olive oil, season with salt and pepper. Place the chicken and salad between the two baguette halves.
