These sandwiches are filled with pulled chicken in barbecue sauce, a healthier take on traditional American pulled pork. This recipe uses store-bought rotisserie chicken. Remove the skin and shred the meat along the grain with two forks. To serve, toss the pulled chicken with a light barbecue sauce made with tomato sauce, molasses, spices, apple cider vinegar, and a touch of liquid smoke for a distinctive, mouthwatering flavor. Serve on whole-grain buns with a lettuce leaf.
