Even without a smoker, you can make delicious smoked chicken. Simply wrap wood chips in foil, poke holes in them, and place them on the grill. The chicken is roasted and smoked simultaneously for no more than an hour and a half. To ensure even cooking, cut the chicken in half and marinate it for an hour in a dry spice mix beforehand. The chicken will turn out delicious, with crispy skin and juicy meat.

Cooking the dish according to the recipe:
- In a medium bowl, combine the dry ingredients. Rub the spice mixture over both chicken halves. Cover the chicken with plastic wrap and refrigerate for 1 hour.
- Place the applewood chips in the smoker of your grill. If you don't have a smoker, you can make a foil roll with the chips, poke a few holes in the top with a fork, and place it directly on the hot coals.
- Place the chicken skin-side up on a hot grill. Smoke over wood chips for 1 hour and 20 minutes. Cover the chicken to ensure proper smoking. This will also prevent the wood chips from catching fire. After 30 minutes, flip the chicken over. The chicken should be done when the juices run clear near the bone.
